Take care! Never mention apple or pear clafoutis ... to a Corrézien, in that case it's a flognarde because clafoutis is one of Correze's unmissable specialities, and of course it's made with cherries. It's a dessert traditionally and exclusively made with whole, unpitted cherries (woe betide you if you remove the stones, they're what give it the flavour!) and entirely covered with a thick pancake batter.

It's well known that the best recipe is always our grandmother's!

But here's a recipe you can't beat!

Recipe

Preparation time: 15 min

Cooking time: 45 min

Ingredients for 6 people :

  • 500 g cherries
  • 125 g flour
  • 4 eggs
  • 100 g sugar
  • 25 cl milk
  • 1 sachet vanilla sugar
  • 20 g softened butter

Preparation :

  1. Preheat the oven to 180°C or gas mark 6.
  2. Mix the flour, caster sugar and vanilla sugar in a bowl.
  3. Make a well and add the whole eggs.
  4. Dissolve the mixture by pouring in the milk.
  5. Once everything is well mixed, add the cherries (unpitted!) and the butter cut into pieces.
  6. Butter a baking tin and pour in the mixture.
  7. Bake for 45 minutes.

Enjoy warm or cold, depending on your taste!
