Take care! Never mention apple or pear clafoutis ... to a Corrézien, in that case it's a flognarde because clafoutis is one of Correze's unmissable specialities, and of course it's made with cherries. It's a dessert traditionally and exclusively made with whole, unpitted cherries (woe betide you if you remove the stones, they're what give it the flavour!) and entirely covered with a thick pancake batter.
It's well known that the best recipe is always our grandmother's!
But here's a recipe you can't beat!
Ingredients for 6 people :
- 500 g cherries
- 125 g flour
- 4 eggs
- 100 g sugar
- 25 cl milk
- 1 sachet vanilla sugar
- 20 g softened butter
Preparation :
- Preheat the oven to 180°C or gas mark 6.
- Mix the flour, caster sugar and vanilla sugar in a bowl.
- Make a well and add the whole eggs.
- Dissolve the mixture by pouring in the milk.
- Once everything is well mixed, add the cherries (unpitted!) and the butter cut into pieces.
- Butter a baking tin and pour in the mixture.
- Bake for 45 minutes.
Enjoy warm or cold, depending on your taste!
